Origin & Production
The journey of our highest quality olive oil from Spain to your kitchen begins in our family-owned olive groves in the foothills of sunny Montes de Toledo.
This location provides the perfect climatic conditions and rich soil to produce olives that produce the high quality, flavor-rich, extra virgin olive oil we are known for. We grow a variety of olives including Cornicabra, Picual, Arbequina and Hojiblanca—all 100% organically grown.
We are careful stewards of the environment, so there are no pesticides or herbicides used in our groves.
Each tree is cared for based on its individual needs and carefully pruned after the harvest. The soil is tilled minimally, so as to not disrupt the special ecosystem of the groves.
We closely monitor our olives and then harvest at the optimal moment when the fruit is green to ensure superior quality extra virgin olive oil with highly nuanced flavors. These practices help guarantee the best quality year after year to deliver the finest olive oil to your table.
Upon harvest the fruit arrives at the mill where it is classified and the extraction process begins. After the olives are transformed, the oil is carefully stored in stainless steel vats until it is time to bottle. Everything is done on-site to ensure the highest quality allowing our oils to achieve organic certification.
